Carrot Top Pesto

Stop throwing out/composting those carrot tops! Combining the carrot tops with spinach, arugula and basil mellows out the strong carrot flavor and creates a delicious vibrant green sauce. This is an easy recipe to play around with ratios, if you don’t have all three (spinach/arugula/basil) laying around just do a 50/50 ratio with carrot tops with one or more that you do have. Definitely make a large batch for the rest of the week or to freeze for later!
