Eggplant Meatballs with Zucchini Noodles

This recipe utilizes two of the summer season’s most prolific gifts: zucchini and eggplant. Add in homemade marinara from all the delicious tomatoes and you’ve got a mid-season trifecta! The “meat”balls store in the fridge for up to three days or will keep in the freezer for up to two months.
