Green Science Adventure Camp 2013: Week 2, Day 4

Hi Peppers!

It was fishing day at camp so we spent a lot of time by the pond today!

Some of us managed to catch fish and some of us had fish get away! Everyone had so much fun using their casting skills they practiced yesterday and hanging out with the counselors.

We made seed balls this morning too! We picked out our seeds to put in our balls of clay and had lots of fun getting messy.

We could smell Garden Kitchen all the way out at the pond this morning because they made yummy applesauce and potato pancakes.

We got to spend more time with the goats today at the goat obstacle course. The kids (human and goat) had a great time going through all the obstacles!

Exploring the pond was fun because we all had nets to catch the cool things we found. After we found some cool things we looked at them with magnifying glasses.

In afternoon Garden Kitchen we made sushi with real seaweed! Some people were a little nervous at first to try it but as soon as they did they were asking for seconds.

Don’t forget our skits tomorrow at 3:30! The groups have been working so hard all week on them.

 

Garden Kitchen Recipes

Homemade Potato Latkes & Applesauce

-2 lbs russet potatoes

-1 medium onion

-1/2 cup scallions

-1 large egg

-Salt / Pepper

-Vegetable Oil

 

Peel potatoes & put in a bowl of cold water.

Using a grater or food process, coarsely grate the potatoes and onions.

Place mixture in a tea towel and squeeze all liquid out into a bowl.

Pour off the water, leaving only the potato starch at the bottom of the bowl.

Mix the potato and onion with the potato starch.

Add scallions, beaten egg & salt/pepper

Heat griddle and coat with thin film of vegetable oil.

Take 2 tbsp of potato mixture in the palm of your hand and flatten into a pancake.

Place the pancakes on the hot griddle, flatten with a spatula and fry until golden.

Flip pancakes and brown the other side.

Remove pancakes and drain on paper towels.

 

Garden Vegetable Sushi

-2 cups Japanese white sticky rice

-12 roasted seaweed sheets

-1 large cucumber

-4 fresh (small) carrots

 

Cook rice until tender and let cool.

Wash and peel large cucumber.

Slice cucumber in half lengthwise & peel 12 large slices from the center.

Chop remaining cucumber into small bite-sized pieces.

Wash and peel fresh carrots. Using peeler, create long thin strips of carrot.

Chop remaining cucumber into bite sized pieces.

Lay out seaweed sheets and lightly brush with warm water.

Lay out cucumber & carrot slices for each camper.

Place a spoonful of rice on each seaweed sheet/cucumber & carrot peel then add toppings.

Roll and enjoy!
