Pumpkin French Toast Bake

Pumpkin pie…but make it breakfast. This French toast bake is assembled ahead of time which makes it perfect for a cozy fall brunch! Use pumpkin butter if you have it, but a simple pumpkin puree works great, too. Puree of another sweet winter squash would also make a great twist on this recipe.
