Roasted Beet and Onion Salad

With Feta Cheese and Balsamic Vinaigrette, this is a quick salad that uses all parts of the beet (root, stems and leaves, yum!). After a short bake, the beets and onions and soft and caramelized, perfectly highlighting their flavors.
