Kale Muffins

Perfect for a morning boost. Bake a large batch and freeze some for crazy mornings, simply stick it in the microwave for a healthy warm treat.

  • 1 3/4 cup flour
  • 1/2 tsp baking soda
  • 1 1/2 tsp cinnamon
  • 1/4 salt and 2 tbls flax
  • 1/2 c honey or maple syrup
  • 1/4 c cocunt oil (melted)
  • 2 – 4 stalks of chopped kale
  • 2 mashed bananas
  • 2 tsp vanilla
  • 1/4 c coconut

Mix dry with wet ingredients, add milk if the batter is too dry. Bake at 350 degrees for 15 minutes and enjoy!
