Colcannon

This recipe is a St. Patrick’s day favorite! A creamy mixture of mashed potatoes, greens, and/or cabbage. For a variation, sub half the potatoes for parsnips. Also great with the addition of chives, leeks, and bacon.

Italian Sausage and Cabbage Stew

This easy, hearty stew is sure to warm you from the inside out during the cold months! Collard greens or lacinato kale make great substitutes for cabbage in this dish as well. Can easily be made vegetarian by omitting the sausage and doubling the beans.
